Carrot Soup

I have to say, we weren't one of those families who grew up on carrot juice and carrot soup. We did munch on raw carrot sticks a lot but cooking carrots really brings out a different flavor that I'm only now exploring more as an adult.

This carrot soup has that rich carroty sweetness which is accentuated by the addition of sweet potatoes. Curry powder rounds this dish out to have a surprisingly complex and interesting flavor despite its simple ingredient list.

The ingredients in this soup are amazing for your health. Lutein and beta-carotene found in carrots have been known to decrease risk of glaucoma (they always said carrots were good for your eyes :). Sweet potatoes are chock-full of antioxidants too; they're anti-inflammatory and can help regulate your blood sugar levels.

Plus both gorgeous, orange, root vegetables have oodles of vitamin C which makes this a yummy warm meal to have come fall when those common colds start going around.

Carrot Soup Recipe

Ingredients

  • 1 large white onion, diced
  • 1 pound of carrots, peeled and chopped (about 6-7 large ones)
  • 2 sweet potatoes, peeled and chopped
  • 6 cups of vegetable broth
  • Olive Oil
  • 1 T yellow curry powder
  • Optional: 1 jalapeno (if you want a bit of kick)
  • Optional garnish: plain yogurt and pepitas

Directions

  1. In a large soup pot, sweat your onions in olive oil (if you opted for a kick, add diced jalapeno in this step).
  2. Add carrots, sweet potatoes, and pour in vegetable broth. Bring to boil and then let simmer for 40 minutes or until veggies are soft.
  3. Transfer to blender or food processor to puree the soup or use a hand blender. Garnish with sour cream and pepitas for a little tang and little crunch.

Most of the time I find myself making bean soups or other legume soups. Having a pure vegetable soup is a really nice change once in a while. You really get to explore and savor the tastes of few ingredients. It's easy one-pot-meals like this one that makes me appreciate cooler weather and the simplicity of a cozy evening at home with a healthy dinner to enjoy.
