Creamy Lemon Blueberry Smoothie

I may or may not be going overboard on the lemons. I piled so many in my basket at the store today that the check-out cashier got annoyed counting them. I think the total came to 16? Oy. When she asked me if I was making something special with them I didn't have any good excuses cooked up. What can I say, they just spoke to me. 

Lemons are incredible. They're my favorite color so that's always a win. They brighten flavors, boost your mood, and clean your body from the inside out. It's not unusual for me to add a lemon to my green smoothies but adding two in this recipe really brought them front and center. 

The combination of lemons and blueberries feels both reliable, maybe obvious and yet fresh and fun at the same time. Even though there was no part of my childhood in which I ate lemon blueberry flavored anything, the taste of this smoothie made me nostalgic for summertime and playing outside. It's reminiscent of lemonade except naturally sweetened and with the nutritional bonus points blueberries bring to the party. 

Isn't that weird how things can remind you of the past or remind you of a season even if they weren't really part of that period of your life?

I hope that it's some sort of primal seasonal produce affection and not a bunch of social and advertisement brainwashing. In any case, this felt like drinking up early summer in a glass. And the best part is that thanks to simple ingredients, you could blend this up in the dead of winter and have a bit of an escapist summery day dream if you'd like.   

Ready to get started? 

Okay, so you got your banana. You got two lemons, a cup of unsweetened almond milk and one and a half cups of frozen blueberries. You can use fresh blueberries but if you do you might want to add some ice to make it cold.

You got yourself a handy dandy blender. Doesn't need to be a fancy blender. Just a blender. Squeeze the juice out of those gorgeous lemons and throw all that stuff in there.

Blend it together and admire your creamy dreamy perfection. That's it! Simple as can be. 

As my official taste tester, I gave Evan a sip to see what he though. He drank the whole glass. :) 

After a long and record-breaking winter I think we are all looking forward to the bountiful produce the warmer months bring. Is there something in particular that you wait all year for? Mine would definitely be peaches. 


Creamy Lemon Blueberry Smoothie

Yield: Makes 24 oz.

Ingredients

  • 1 cup unsweetened almond milk
  • 1.5 cups frozen blueberries
  • 1 banana
  • 2 lemons, juiced

Directions

  1. Add all ingredients to a blender, pouring in the liquids first. 
  2. Blend until smooth, then drink up the sunshine.
